Re: “Brisket Throwdown

Willie´s is the best! Pretty much all their food is good, And if I remember right, the family lived in Texas many years before moving here.

Re: “Brisket Throwdown

Here we go -gettin a =Austin Texas guy (college town) to be a judge on BBQ here in spokane?? We do not have Texas BBQ in this town-none - want a real comparasion on BBQ -Texas REAL STUFF?? Fly in here some BBQ from any of the 3 places in LOCKHART TEXAS!! Get them all to have a real contest, Smittys ,Kruse, & the other one there (name escapes me ??) Now - get that stuff here in Spokane- get ther real Texans around to be judges & then we have a competetion against all others in the area. Yes there are some good ones around but ? The Best TEXAS BBQ? Not Here!! Comeon guys & girls -try the real stuff & then judge all others !!

Re: “Brisket Throwdown

Wow! I have ate BBQ Brisket at all of the above mentioned places and I have to say a couple of things....
1) You can´t go to a place just once and judge it. You could have gotten a piece of meat from an end instead of a middle, etc...
2) Chopped brisket IS perfectly acceptable, though not the way I like it.
3) I know for a fact that Willie´s cooks their brisket in a convection oven and then smokes it at the end (Not proper technique in any locale). I have asked Willie why he does this and he says that the cost of wood to smoke it over the wood the whole time is very prohibitive. I call it the cost of doing business, but whatever.
4) You are from Texas.....your idea of BBQ is completely different from EVERYONE elses idea. For instance, you don´t even know that Pork exists as a food to BBQ and you think Mesquite is the best wood since the dawn of time.
5) In full disclosure I would like to say that I am a Pitmaster of a competition BBQ team and a caterer and know fully well what real BBQ tastes like. I am a member of the Pacific Northwest BBQ Association (PNWBA) and also of the Kansas City BBQ Society (KCBS). I also am well versed in both the science and methods of cooking high-quality meat and your "Review" is sad at best. Just another way to twist the story.
6) I have eaten several times at Willie´s and was VERY DISAPPOINTED with the flavor and quality of the food. I asked for some BBQ sauce (you have to ask or they don´t provide it) and was told "Our meat doesn´t need sauce!". Guess what? I´m the CUSTOMER and if I want sauce.....then just give it to me without the speech! If Willie´s is in business for another year....I will be shocked. Maybe it´s time for some REAL BBQ in Post Falls.

Re: “In Search of A Decent Plate of Spaghetti

Spent a very pleasant sun lit afternoon lunch at Geno´s on Saturday past. Delightful small plates (The Bruschetta with fresh Mozarella, and two "Sandwich Plates" with a side Ceasar for two bucks extra were slam dunk good). Looking forward to returning for a full meal sometime soon... oh, and the house Chianti is just fine. John

Re: “Brisket Throwdown

Chopped beef is a legitimate and authentic regional variation for preparing a brisket sandwich. If you don´t like it, that´s fine, but it doesn´t mean the brisket "should be sliced."

Re: “In Search of a Heavenly Dog

If you really are wanting a hot dog, go to Wild Dawgs on Howard in downtown Spokane. My boyfriend and I were running errands downtown and I saw the article from the inlander about this new place and had to try it. It has the weridest toppings, but take an adventure and try something DELICIOUS!

Re: “Biscuits-and-Gravy Throwdown

What about the GR or now known as Nosworthys in Coeur d Alene, ID. Best breakfast in the inland northwest and servings sizes are huge. Killer prices and killer food. Bill and Kelly sling the best burgers and Omlettes around. Wrap it all up with a schooner of red beer and it is a meal fit for a king (or Queen).
