For perfectly prepared pie every time, locals rely on Birdie’s Pie Shop.
Sure, you can buy a box mix for any manner of cake, cookie or dessert bar, and you can certainly snag a premade pie at the grocery store. But it won’t be a from-scratch, made-with-love Birdie’s Pie.
Craving something decadent like chocolate cream, the say-hey-to-summer strawberry rhubarb, or a classic like apple pie that you loved as a kid but don’t have the time, energy, or space to make yourself? Birdie’s Pie Shop has you covered. That little get-together you only just found out about? Order a foursome of 4-inch pies or an eight-pack of 2-inch bites that you can mix-and-match so everyone gets to try something different. And for the hungry crowd, try the personal or whole pies, roughly 11 inches of yummy goodness.
Sweet, right? Birdie’s also has savory pies. In addition to chicken pot pie, Birdie’s offers a rotating selection of savory pies, including pulled pork, roasted veggies, and taco pie.
“That’s what I love, is being stretched creatively to come up with new flavors,” says Sharee Moss, who launched Birdie’s Pie Shop with her husband, Brad, in 2019.
With an array of sizes and flavors, plus gluten-free and vegan options, no wonder Inlander readers and Yelp reviewers have consistently voted Birdie’s pies among the region’s best.
“People love the signature flaky crust of our pastry pies,” says Sharee, who named the popular pie shop after her grandmother, Birdella Cox Lybbert. “People also love the fact that they can tell that everything is made in-house.”
Grandma Birdie was also the inspiration for the cozy décor and welcoming vibe at all three Birdie’s locations, in Post Falls and Hayden, Idaho, and on North Monroe Street in Spokane. Come into our shops and our cases are always full, no need to preorder.
When farmers market season starts, find Birdie’s Pie Shop in Liberty Lake on Saturdays, North Spokane’s Fairwood Market on Tuesdays, Kendall Yards Night Market, and rotating between various other markets as noted on the shop’s website. Look for the vintage 1961 camper the Moss’ nicknamed the Pie Bar.
Can’t make it to Birdie’s? They’ll also come to you, catering your next work outing, cocktail party, wedding or whatever.
