We've been hearing rumblings that Chipotle, the national "gourmet" (read: fast-casual) burrito chain, was looking to expand into the Spokane area. We've been hearing this since last year this time, actually.
Nothing concrete had hit, though, until today, when Caleb Ingersoll (of the Cathedral Pearls Ingersolls) sent over this building permit submitted by an Omaha, Neb architect for a building between Ruby and North Division near Gonzaga. (It was a Hollywood Video for years).
