Colfax farmer to make whiskey via Dry Fly

Back in April, we reported on a bill signed into Washington state law by Gov. Chris Gregoire, which allowed distilleries like Spokane's Dry Fly to produce triple the amount of booze they had previously been allowed to make each year. Dry Fly's Don Poffenroth told us one of the added benefits of the bill was that it freed them to contract out their services and facilities to other prospective bootleggers.

"We have one farmer out of Colfax we're working with right now on an Irish-style whiskey," he told us.

That Colfax farmer now has a name: Tim Danaher.

The Spokesman-Review reported today that Danaher and his wife, who run a barley farm in Palouse, plan to make six barrels of "Hibernian" whiskey at Dry Fly headquarters this year. It'll be ready three years after it's been distilled.
