Sante celebrates its re-opening tonight

After a trial opening Tuesday night, Sante Restaurant and Charcuterie downtown will have their official reopening tonight.

The restaurant, which serves mostly French dishes, has been under renovation since a kitchen fire on Dec. 11. With the help of insurance money from the fire, $45,000 worth of new and improved kitchen equipment has allowed Sante’s chefs to expand their culinary skills and revamp the menu.

“The menu is about 90 percent new,” says Jeremy Hansen, owner and executive chef. “With our old equipment, we were pretty limited on what we could do and since we got some extra money for upgrades, we were able to get some specialty equipment to use for more intricate work.”

According to Hansen, Tuesday’s opening was to test the new equipment and see how people respond to the new menu items.

“The soft opening was a total success,” says Hansen. “It was our first night that we turned on all of our new equipment and got to try out the new techniques.”
